Our roots
The giant sycamore tree standing next to the Michelin-recommended Platán Bistro means much more than just a eponym (platán means sycamore tree in Hungarian). Planted in 1785, this magnificent tree connects us to the ground in which we share our roots, to the changing seasons we both follow; to the nature, which is our main inspiration and to our past and our traditions on which we rely.
Our credo
We believe that gastronomy cannot and should not be disconnected from nature, since that is where we source our ingredients from. The closer we are to nature, the better quality we can enjoy in our food. Respect for nature in the kitchen means a respect for the seasons
and the seasonality itself. When and what is grown in our own garden is decisive in our recipe development, just as much as the stage of growth the Angus cattle on our farm are in. We create together and constantly change with the seasons.
Azt gondoljuk, hogy az étkezést nem lehet és nem is szabad elválasztani a természettől, hiszen onnan vesszük a hozzávalókat. Minél közelebb vagyunk a természethez, annál jobb minőségű ételt élvezhetünk. A természet tisztelete pedig egy konyhában mindig együtt jár az évszakok, szezonok tiszteletben tartásával. Receptalkotó munkánkban meghatározó az, hogy mikor, mi terem saját kertészetünkben és, hogy farmunkon milyen fejlődési fázisban vannak az angus marhák. Együtt gondolkodunk és folyamatosan változunk, változtatunk az évszakokkal.

For us, "Hungarian cuisine" is not just about the signature tastes and memories of our childhood that define our identity. It is the basis on which we build our recipe ideas.

By combining the gastronomic knowledge that we carry, with techniques, technologies ideas and spices acquired all over the world, we try to evolve and grow - towards the future.
Contemporary Hungarian cuisine draws on traditions of the past, utilising technologies of the present – including international influences – for a more sustainable, health-conscious future.
Responsibility and Sustainability
Quality is a very complex factor in gastronomy. It is pointless to prepare a dish flawlessly if it has not received the care and attention the food deserves. That is the reason we set up our horticultural farm, which now provides more and more of our vegetable ingredients, and why we started keeping our own Angus cattle on the farm.
This way, we are not only able to take care of the quality of the ingredients but also continue to work towards sustainability. More and more, we're growing things waste-free, avoiding lengthy distribution chains and relying on local resources – from the garden straight to the table.
Our Team
For a bistro to make it onto the Michelin Bib Gourmand list, it takes consistent and hard work, a commitment to quality standards, and nevertheless, uncompromising perfectionism.
To execute the same tasks day in, day out, with the same level of perfection, to create a menu and then to work on new ideas without sparing any time, energy or creativity – this is what a dedicated and passionate professional can do.
Our chef, Donát Mogyorósi, was originally supposed to be a professional athlete, but luckily for us, he chose gastronomy instead of the national rugby team.
During his years at the Olimpia restaurant, Donát got used to the fact that the chef's offer might change daily, always striving for perfection with the ingredients at their disposal. He was first brought to Tata by the opportunity of a ‘stage’ alongside István Pesti, and a few years later he returned to run the kitchen at Platán Bistro, where he is taking care of not only the menu and the brand, but also the team that cannot be separated from the ethos of the restaurant. But perfectionism on its own would not be enough for success. Flexibility is also a requirement.
Donát and the team work together, responding to each other's ideas and developing them, to create a constantly evolving menu and improve recipes until they are ready to be served. They are continuously inspired by tradition, nature and the seasons.
Our patisserie
Our dessert range is the brainchild of Tamás László, who came to Tata after running Gerbaud and Centrál confectioneries with the aim of creating a fresh offer of low-sugar French desserts.
The seasonal, fruit-filled range also includes the Platán dessert, Platán's signature dessert.
Our pastry selection, courtesy of Tamás, fits perfectly into our Michelin-certified milieu and is a major attraction not only at the end of a dining experience, but also for guests who visit us directly for the pastry delights.
The perfect finishing touch is of course provided by the carefully prepared coffee creations from our baristas, with an expert selection of speciality ingredients.

Types of Our Gift Vouchers:
The information required to issue the gift voucher (e.g., requested voucher type, recipient’s name, amount, etc.) can be provided through our form, which can be accessed by clicking the „Proceed to Order” button below.
Useful Information and Terms:
1. We prepare our gift vouchers in two formats
1.1. Voucher printed on elegant cardstock, available for pick-up on-site
1.2. Printable voucher that can be sent via email
2. Voucher purchase process:
2.1 Upon receipt of the necessary information (voucher details and billing information), our colleagues will issue an invoice for the gift voucher amount.
2.2. For on-site pick-up, the invoice can be settled at the reception upon collection.
2.3. If the email delivery option was selected during ordering, we will also send the invoice containing the bank transfer details when the voucher is sent, based on which the transfer can be made. Please note that the voucher will be activated once the full invoice amount has been received. If the invoice (and voucher) amount is not settled by the deadline specified on the invoice, the voucher will be deleted from our system.
Please note that all our vouchers are provided with a unique identifier and can be used once only. Vouchers are valid for 3 months from the date of issue, with the exception of Platán Gourmet Restaurant vouchers, which are valid for 6 months from the date of issue. When using the voucher, please ask the recipient to present the original gift voucher on-site. The voucher cannot be exchanged for cash. If the total value of services used is less than the voucher amount, we are unable to refund the difference, but the difference can be spent at that moment. If the value of services used exceeds the gift voucher amount, the guest must settle the difference on-site. If the gift voucher is not used by the expiration deadline, the voucher amount is non-refundable.

Behind the Iconic Tafelspitz
The recipe for Tafelspitz was popularised during the golden age of the Austro-Hungarian Empire, especially in Vienna, from where it conquered Hungary. The dish, a favourite of Franz Joseph, is also mentioned by Gyula Krúdy, one of the founders of Hungarian culinary literature, but János Gundel served it immediately after the Austrian–Hungarian Compromise (1867).
